I think Mexican has to be one of the easiest types of food to make healthy and VERY yummy! Here are a few of my personal favorites... They aren't recipes so much as ideas that you can shape into what you really like. Please feel free to comment and add your own :)
Wannabe Grilled Stuffed Burrito
Serves: 1
1 FRESH homemade corn tortilla
1/2 cup mexican seasoned rice*
2 Tbsp. each black beans and corn
1 Tbsp. Salsa
Homemade guacamole*
Mix rice, beans and corn and place in center of tortilla. Fold in opposite sides and roll up like a burrito. Place in pre-heated, non-stick skillet and grill for about 3 minutes or until it is slightly crispy and beginning to brown. Flip over and repeat. Enjoy!
*Mexican seasoned rice: Place correct amounts of water and rice (according to package instructions) into a pot and add salt, pepper, ground cumin and chili powder to taste. Cook according to pkg. instructions and enjoy :)
*Homemade guacamole cheat sheet: All you need for this quick guac. recipe is fresh avocado and the rest is stuff that you probably have hanging out in your spice rack. Smash up the avocado and mix in some salt, pepper, garlic powder, onion powder and crushed red pepper flakes. Let set for 5-10 minutes covered in the refrigerator and enjoy!
