I have to confess that I did not workout this morning. BUT, I think that I have a pretty good excuse... I spent my entire day (and by entire, i mean, ENTIRE.) Doing more research. I mentioned yesterday that I wasn't sure how the whole low carb thing was going to work out with the gluten-free and vegan lifestyle. Well, I am hear today to tell you that I think I am on my way to working that out! The answer... almonds. Yes, I know, I said that I thought they were amazing yesterday and my research today only proves my point. What I found out today is that almond flour can be used almost interchangably with wheat flour. It has only 4g carbohydrates per cup (compared to the 100+ in wheat flour) and it is a great source of protien, iron and all kinds of other stuff. I am going to make some almond milk today (well, with what I have left of today) and I will let y'all know how that turns out. It is supposed to be easier to make than rice milk and WAY fewer sugars and carbs. Also, it doesn't appear to be that expensive either (major bonus), and I'm sure it will be pretty tasty. Wish me luck...
Oh, and the homemade corn totillas for the taquitos turned out great! Super yummy with homemade guacamole :)
Oops, I misspoke, there are actually 16g of carbs in 1 cup of almond flour, but some would say only 4 count b/c they subtract the fiber which is 12g. My bad :)

ReplyDeleteYou know I am not the most healthy eater LOL but I decided I would check out your blog for moral support :) So, are you saying you can use almond flour to substitute for wheat flour which you substitute for enriched white flour? Just curious because I am not a big fan of the wheat flour and maybe I could try the almond flour instead?

Hi Stacey! Thanks for reading :) Well, I just ordered my almond flour over the internet and I will be using it by the end of the week or the beginning of next so I will post how it works. I have been doing reasearch though and some people say you can. Most of the recipes that I have read add xanthan gum or guar gum to replace the elasticity that the gluten in wheat provides. I am definitely not an expert, but I hope to be one soon :) I'll let you know what I find out!
ReplyDeleteJust started reading today, I think it's great you are blogging all this. My own "start exercising and eat right" journey started about 2 months ago. I'm down 5 lbs and 3% body fat. I did get my workout in today but had chili burgers for dinner so I think I'm net 0 for the day. :) Can't wait to read more.

ReplyDeleteI joined the Y and met with a personal trainer there for a couple sessions. I'm now going about 5 times a week for cardio and then adding weight training 3 times a week. The weight program is just simple stuff like squats and curls combined for efficiency - 12 reps repeated 3 times.
